ingredients: (For 4 people)
- 150 grams of bacon
- 1 onion
- 2 tablespoons oil
- 1 bit of chilli
- a little bit of chopped tomatoes
Thinly slice the bacon and onion.
Put them to fry in the pan with the oil at moderate heat.
Combine the chopped tomatoes and chilli.
Season with salt and cook for 15 min. approx.
Please note: It is used to season dry pasta, spaghetti, macaroni, bucatini. It is completed with grated pecorino cheese.
Very traditional recipe of the Lazio countryside and, more precisely, of Sabina. This explains also the misunderstanding on the name: originate in Amatrice, a small village on the border between Lazio and Abruzzo. They should be called "amatriciana", therefore, but the common use has established otherwise: "matriciana".
